Fun with Arctic Char

Sample Menu

Arctic Char with Mushrooms

 

2 filets arctic char, skin on

4 tbsp unsalted butter

Olive oil for sauteing

2 lbs mild mushrooms of choice- cremini, brown, white, chanterelle, oyster, shiitake- chopped

2 cloves garlic, minced

Half a yellow onion, thinly sliced

5-7 sprigs fresh thyme, stalks removed (if dried, a few tsp)

A few sage leaves if desired

½ tbsp dijon mustard (more if desired)

½ cup white wine or champagne vinegar*

Salt and pepper to taste

Chopped parsley for garnish/sprinkling

Lemon wedges for garnish/sprinkling


 

Oven-fried Arctic Char with butter and herbs

 

2 arctic char fillets, skin on

4-7 tbsp unsalted butter, pre-melted or cut into chunks

1 clove garlic, thinly sliced

Fresh herbs such as thyme, lemon thyme, and oregano, stalks mostly removed (leave a few stalks whole)

7-8 chives, cut into thirds

Olive oil for drizzling

Salt and pepper

Lemon wedges for garnish
